What’s different on this 4th? Really, when you think back, every 4th is different. I’ve given up bungy jumping, rebuilding my cars, camping in the wild, and collecting stray children. Turning 88 did have some bearing on my choices. So, what does this 4th encompass? Dust bunny chasing, ring removal, that’s toilets not diamonds, turning a 10 lb bag of russet potatoes into individual freezable dinner delights. Stuffed, scalloped, smashed and friables, ready to go. Hint, putting smashed potatoes in muffin pans, freeze, then bag is perfect for a quick dinner for one. I do the same for gravy. Faster than a speeding bullet, a gourmet dinner. My reading/ listening consists of real news, fake news, and behind the curtain news. Believe it or not there are small golden nuggets of truth to be found with my jaundice eye of course. I have become the ‘go to’ person for research on drugs and ills for friends and family. Just call me Dr Jung. (sick joke) With a quick change of hats I become a Wall Street Guru chasing the next big 10 bagger! Things I never had time for. I have this addiction to learning and now, the time to go down paths and explore what ever. I never know what tomorrow will bring…like ‘Alice going down the rabbithole hole’.

Sounds like you’ve been keeping busy none the less. I thought I was busy before with my work with the teams of adults in Child Evangelism Fellowship after school programs, my work with the fourth graders in our church. Now I am working with my husband making sure he is free from infection from his Diabetic foot ulcers, trying to keep a balanced diet going and cleaning, cleaning and more cleaning. Hang in there.
Dear Claudette, I usually do not offer unsolicited advise but your husband’s foot ulcers prompted me to share something I accidentally discovered. It is NOT a medicine, not a Dr’s advice, not voodoo nor an ancient tribal myth. It is the ring on my finger! It is 14c gold with a large quartz, topaz, stone setting. My ankle was swollen and tender to the touch. I was gently rubbing it when the ring turned inward and was laying on my ankle. It wasn’t in the way so I continued rubbing. The swelling seemed to dissipate and wasn’t tender to the touched. The next time my ankle was swollen my rubbing didn’t seem to help, so more as a joke, I turned my ring inwards and laid the stone on the swollen, tender part. The swelling went down and didn’t hurt to the touch. This crazy, whatever, has worked over 9 times so far. I’ve researched this and all I got was a mumbo jumbo, some stones have magical/health properties, which was no answer at all. Since it is free, not a medicine, has no side reactions and is not taken internally I see no down sides except it might not “work” for everybody. If you decide to try or to deposit it in the oval basket that’s fine but if it works would you let me know?
Elissa, It’s the “addiction to learning” that keeps me going, too. And how easy does Google make that these days! How well you put this all – including the great potato ideas. A treasure trove here, as always.

Stuffed Potato recipie please
Hello CC, My pleasure.
4 to 6 baking potatoes, depending on size
8 oz. cream cheese
2 dollops of sour cream, just enough to make creamy, not lumpy
butter, as much as you can handle
salt, I use sea salt, black pepper, chopped chives/parsley, garlic powder, finely chopped onion…amounts are according to your taste buds.
Scrub, dry and lightly oil the whole potato, bake at 350 until fully cooked.
Wrap cooked ‘tater in dampened dish towel, to keep skins soft.
Thinly slice off from long side one slice leaving an open boat look. These slices can be jazzed up with cheddar cheese, spices and rebaked as snacks.
Scrape out, carefully, all potato meat and add all above ingredients. I use an elec. mixer…easier on the wrists… until smooth and creamy. mashed potato consistency.
Re fill potato skins, give it a swirl on top and dust with paprika…heat and eat, or freezes ,heat and eat. if you wind up with only little, falling apart skins, grease a cupcake pan, fill pan with potato mixture, freeze, remove and bag them.
Can’t remember if I ever used that cupcake pan for little cakes. I freeze portion size ,gravies, veggies, fruit salads, cranberry sauce, even do it to ice cream. Some how a bag of frozen nuggets takes up less space than ‘containers’. And is not forgotten in the back of fridge growing legs!!
Thanks! I’m looking to fix dinners ahead of time. This helps. I make breakfast bowls and freeze them. Brown patty sausage, add onion, bell pepper, chopped red potatoes and saute till tender. Add eggs (1 make 6 bowls at a time so I use about 8 eggs, give or take). Cook till eggs are done. In 6 bowls (w/lids) divide mixture. Top with grated cheese. Put on lid and freeze. Reheat in microwave about 3minutes. Even my husband likes them and he is a picky eater!:)
